In order to improve the polishing step to reduce the percentage of broken grain in the processof milledrice in the Santa Catalina Mill Company S.R.L.,was conducted this investigation. It performed the rice milled in the laboratory to determine that the material meets the requirements of milled, especially the percentage of broken kernels.
