Abstract
Se evaluó la calidad bacteriológica de alimentos en los diferentes restaurantes de la ciudad de Trujillo 2017. Se determinó la concentración de Coliformes totales, Coliformes Fecales y Escherichia coli, de 8 urbanizaciones de muestreo mediante la técnica del Número Más Probable, tomando como referencia los criterios bacteriológicos para Evaluar muestras de alimentos y bebidas para consumo humano, bajo la Norma Sanitaria: NTS Nº 071-MINSA/DIGESA-V.01. se encontró que la concentración promedio de Coliformes Totales en los restaurantes: Daniel Hoyle, Razuri, Aranjuez, Santa María, Chicago, Torres Araujo y Trujillo centro presentan valores de; (85; 10.44; 89.5; 119.3; 83.72; 40.75 y 72.4 NMP/g) respectivamente. En cuanto a Coliformes Fecales presentan valores de; (85; 10.44; 89.5; 119.3; 83.72; 40.75 y 72.4 NMP/g) respectivamente y la concentración en E. coli fue de; (2.43; 0.33; 4.0; 10.33; 0.98; 1.65; 0.45 y 1.89 NMP/g). Del recuento se obtuvo que no son permisibles en un 70%, 52% y 22% para Coliformes Totales, Coliformes Fecales y Escherichia coli respectivamente, como indicadores microbiológicos de la calidad de alimentos el grupo Coliformes y Escherichia coli
