Abstract
Se compararon los niveles séricos de hierro provenientes de hígado frito de Gallus gallus y tabletas genéricas de sulfato ferroso, utilizando el método de Iron-Ferrozine de BioSystems. El estudio se realizó en 16 voluntarios aparentemente sanos, a los cuales en el primer periodo se administró por vía oral una tableta de sulfato ferroso 300mg, y en el segundo periodo ingirieron 200g de hígado frito de Gallus gallus con 250 ml de agua, realizándose las determinaciones a los 0,5 horas, 1 hora, 4 horas, 6 horas y 8 horas en ambos periodos respectivamente previa toma de una muestra basal. Las concentraciones promedio obtenidos para el hígado frito de Gallus gallus fueron: 0,5 horas (555,06 ug/dl), 1 hora (743,81 ug/dl), 2 horas (621,30 ug/dl), 4 horas (412,21 ug/dl), 6 horas (167,6 ug/dl) y 8 horas (80,21 ug/dl); mientras que para las tabletas genéricas de sulfato ferroso fueron: 30 min (27,75 ug/dl), 1 hora (83,22 ug/dl), 2 horas (128,65 ug/dl), 4 horas (301,12 ug/dl), 6 horas (438,23 ug/dl) y 8 horas (266.59 ug/dl). De los resultados obtenidos se concluye que la ingesta de hígado frito de Gallus gallus tuvo una mayor absorción y una elevada concentración sérica de hierro, en comparación con las tabletas genéricas de sulfato ferroso.

Were compared iron serum levels originating from fried liver of Gallus gallus and generic ferrous sulphate tablets, using Iron-Ferrozine of BioSystems's method. The study was realized in 16 apparently healthy volunteers, they in the first period a ferrous sulphate tablet was administered for oral route, and in the second period they consumed 200g of fried liver of Gallus gallus with 250 ml of water, the determinations being realized to the 0,5 hours, 1 hour, 4 hours, 6 hours and 8 hours in both periods respectively previous taking of a basal sample. The concentrations average obtained for the fried liver of Gallus gallus were: 0,5 hours (555,06 ug/dl), 1 hour (743,81 ug/dl), 2 hours (621,30 ug/dl), 4 hours (412,21 ug/dl), 6 hours (167,6 ug/dl) and 8 hours (80,21 ug/dl);and for ferrous sulphate tablets were: 30 min (27,75 ug/dl), 1 hour (83,22 ug/dl), 2 hours (128,65 ug/dl), 4 hours (301,12 ug/dl), 6 hours (438,23 ug/dl) and 8 hours (266.59 ug/dl). Of thr obtained results there concludes that the ingestion of liver fried of Gallus gallus had a fast absorption and a high iron serum levels, in comparison with the generic ferrous sulphate tablets
