Abstract
El informe tuvo como objetivo general elaborar el protocolo de buenas prácticas de manufactura (BPM) para el congelado de cefalópodos.
La investigación fue descriptiva informativa con un enfoque explicativo-narrativo, cuya información fue recolectada a través de fuentes secundarias y organizada a partir de normas, libros, tesis y revistas científicas. Se determinó las etapas del proceso de congelado de cefalópodos a través de un esquema de bloques y se procedió a la descripción de cada uno de ellos, evidenciando 16 etapas dentro del proceso, indicándose con la etapa de Recepción de Materia Prima y finalizando con la fase de Despacho. En cada una de ellas se identificó el objetivo, alcance, detalle, instrumentos y/o equipos, desviaciones, responsables, registros y criterios usados para establecer de forma concisa los lineamientos a seguir en cada etapa.
La propuesta de un protocolo de buenas prácticas de manufactura para este rubro dentro de la industria pesquera supone una base fundamental para el diseño e implementación de la actividad de congelado de Dosidicus gigas “pota”, lo que permite tomar mejores decisiones en el manejo del recurso.
The general objective of the report was to develop a good manufacturing practices (GMP) protocol for freezing cephalopods. The research was descriptive and informative with a narrative explanatory approach, whose information was collected through secondary sources and organized from standards, books, theses and scientific journals. The stages of the cephalopod freezing process were determined through a block diagram and a description of each one of them was made, evidencing 16 stages within the process, starting with the Raw Material Reception stage and ending with the Dispatch phase. In each of them, the objective, scope, detail, instruments and/or equipment, deviations, responsible parties, records and criteria used to concisely establish the guidelines to be followed in each stage were identified. The proposal of a good manufacturing practices protocol for this area within the fishing industry is a fundamental basis for the design and implementation of the Dosidicus gigas "pota" freezing activity, which allows better decisions to be made in the management of the resource.
