Abstract
El presente trabajo de investigación tuvo como objetivo determinar la eficacia de la metodología Six Sigma en la uniformidad del peso drenado en conservas de esparrago blanco en la Empresa Agroindustrial Camposol S.A. en el formato kilo bajo. La población estuvo constituida por la producción total de conservas de esparrago en las cinco líneas continuas de procesamiento, que asciende a un total de 75,000 envases de conservas durante un mes. Para determinar la muestra se tuvo en cuenta la norma estándar MIL STD 414, resultandos tamaños de muestra diferentes dependiendo del tipo de variable. Las conclusiones obtenidas señalan que las necesidades a priorizar de los clientes externos son peso exacto del producto (20%); no existencia de defectos en el producto (19.3%); buen precio (17.2%); diámetro adecuado del esparrago (12%); conteo adecuado (11.9%); buen estado del envase (6.8%); fecha de caducidad (4.9%) y buenas propiedades del producto (8%). Así mismo, los pesos drenados antes de aplicar six sigma toman valores entre (LCI:418.66 - LCS: 450.04), con límites de especificación entre 425 a 439, evidenciando que el proceso no está bajo control (Cp=0.45 y Cpk=0.30); no cumpliéndose las especificaciones del cliente y tener un proceso descentrado, generando riesgos a reclamos y pérdidas para la empresa. Se estableció que las causas raíces de la no uniformidad del peso drenado son la deshidratación del esparrago (p<0.05); el desbalance en las líneas de pesado (p<0.01); los procedimientos inadecuados (p<0.01); la variación en el peso de envases vacíos (p<0.05) y el líquido de gobierno (p<0.05). Posteriormente se identificó que los mejores niveles para la optimización del peso drenado es considerar un adicionamiento del líquido gobierno del 2.5%; un escaldado del esparrago blanco de 7.0% y considerar 06 pesadores de los formatos kilo bajo. La eficacia evaluada a través del rendimiento y ganancia, después de aplicar la metodología six sigma es positiva, generando ganancias entre 17,704 dólares y 33,341 dólares. Se hizo también una evaluación de la recuperación productiva, generando un costo beneficio positivo para la empresa, logrando que sus indicadores contables o económicos estén en azul
Abstract The objective of this research work was to determine the effectiveness of the Six Sigma methodology in the uniformity of drained weight in canned white asparagus in the Agroindustrial Camposol S.A. Company. in the low kilo format. The population was made up of the total production of canned asparagus in the five continuous processing lines, which amounts to a total of 75,000 canned cans for one month. To determine the sample, the MIL STD 414 standard was taken into account, resulting in different sample sizes depending on the type of variable. The conclusions obtained indicate that the needs of external customers to prioritize are the exact weight of the product (20%); non-existence of defects in the product (19.3%); good price (17.2%); adequate diameter of the asparagus (12%); adequate count (11.9%); good condition of the container (6.8%); expiration date (4.9%) and good product properties (8%). Likewise, the weights drained before applying six sigma take values between (LCI:418.66 - LCS: 450.04), with specification limits between 425 to 439, evidencing that the process is not under control (Cp=0.45 and Cpk=0.30); not complying with the client's specifications and having a decentered process, generating risks of claims and losses for the company. It was established that the root causes of the non-uniformity of the drained weight are the dehydration of the asparagus (p<0.05); the imbalance in the weighing lines (p<0.01); inadequate procedures (p<0.01); the variation in the weight of empty containers (p<0.05) and the government liquid (p<0.05). Subsequently, it was identified that the best levels for the optimization of the drained weight is to consider an addition of the government liquid of 2.5%; a white asparagus blanching of 7.0% and considering 06 weighers of low kilo formats. The effectiveness evaluated through performance and profit, after applying the six sigma methodology is positive, generating profits between $17,704 and $33,341. An evaluation of the productive recovery was also made, generating a positive cost benefit for the company, achieving that its accounting or economic indicators are in blue
