Abstract
El objetivo del presente informe fue describir el proceso productivo de alcachofa acidificada en conservas, de una empresa agroindustrial cuyas etapas de proceso fueron: recepción, calibración, pelado mecánico, deshojado, repaso, calibrado, trozado, repaso de trozos, blanqueado, envasado, adición de líquido de gobierno, exhausting, cerrado, pasteurizado, enfriado, limpieza y codificado, empaque, asimismo se realizó mejoras en el proceso productivo y se redujo un total de 14 personas, impactando positivamente en el costo de mano de obra el cual disminuyo de 0.366 $/kgdw a 0.311 $/kgdw (reducción de 16%), también se logró cosechar en campo los calibres pequeños de 35 mm a 45 mm, añadiendo 320 mil kilos adicionales de alcachofa, lo cual significo una mejora en el aprovechamiento de la materia prima de la alcachofa en 4% lográndose un aumento en el margen de contribución de 140 mil dólares.
ABSTRACT The objective of this report was to describe the production process of canned acidified artichoke, of an agro-industrial company whose process stages were: reception, calibration, mechanical peeling, leaf removal, review, calibration, cutting, review of pieces, blanching, packaging, addition of government liquid, exhausting, closed, pasteurized, cooled, cleaning and coding, packaging, improvements were also made in the production process and a total of 14 people were reduced, positively impacting the labor cost which decreased by 0.366 $/kgdw to 0.311 $/kgdw (16% reduction), small calibers from 35 mm to 45 mm were also harvested in the field, adding 320 thousand additional kilos of artichoke, which meant an improvement in the use of the material artichoke premium by 4%, achieving an increase in the contribution margin of 140 thousand dollar
