Abstract
El presente trabajo tuvo como objetivo cuantificar nitrógeno total y proteína total mediante método de Kjeldahl-Gunning. Se utilizaron muestras de pulpa de café de la variedad Catimor de diferente altitud (por encima y debajo de los 1500 m.s.n.m), estas se obtuvieron con la ayuda de máquinas despulpadoras de acero quirúrgico y máquina despulpadora tradicional (fabricado de cobre). Los resultados obtenidos fueron: 2.71, 3.38 y 2.15% de nitrógeno total; 16.94, 21.14 y 13.44% proteína total. Cuyas condiciones fueron: a) altura menor a 1500 m.s.n.m y máquina tradicional; b) altura mayor a 1500 m.s.n.m y máquina de acero quirúrgico; c) altura mayor a 1500 m.s.n.m y máquina tradicional, respectivamente. Se concluye que estos valores de nitrógeno y proteína son mayores a lo reportado en la literatura revisada
