Abstract
El presente trabajo tiene como finalidad realizar una evaluación en el proceso de elaboración y producción de conservas de atún (Thunnus albacares) para la empresa BELTRAN PERÚ E.I.R.L. Se realizo la recolección de la información empleado la lista de verificación de la NTP ISO 9001:2009 tomando en cuenta los capítulos VI Gestión de los recursos, VII Realización del producto y VIII Medición, análisis y mejora; empleadas en la calificación de fábricas. Además de realizar un análisis físico-organoléptico siguiendo la norma NTP 204.007:2015/COR 1:2016.2015. Derivado de pescados y crustáceos. De la aplicación de la lista de verificación, la empresa “BELTRAN PERÚ” alcanzo una puntuación del 77.31 % lo que indica que cumple los requisitos con sistemas y rendimientos aceptables. Del mismo modo la encuesta de calificación de fábricas de productos hidrobiológicos, mediante el principio de méritos y deméritos dio un calificativo de B cual indica que cumple con varias condiciones del local, equipo, personal y sistemas de trabajo, necesarias para la obtención de un buen producto. En los análisis físico-organolépticos se puede observar que las conservas cumplen con la norma NTP 204.007:2021. Lo que nos indica que el producto de conserva de la empresa BELTRAN PERÚ cumple con todos los análisis físicos-organolépticos, lo que indicaría que produce un producto de calidad y de alta competitividad.
The purpose of this work is to carry out an evaluation of the process of elaboration and production of canned tuna (Thunnus albacares) for the company BELTRAN PERÚ E.I.R.L. The information is collected using the NTP ISO 9001:2009 checklist taking into account chapters VI Resource Management, VII Product Realization and VIII Measurement, Analysis and Improvement; used in factory qualification. In addition to carrying out a physical-organoleptic analysis following the NTP 204.007:2015/COR 1:2016.2015 standard. Derived from fish and crustaceans. From the application of the checklist, the company “BELTRAN PERÚ” achieved a score of 77.31%, which indicates that it meets the requirements with acceptable systems and performance. In the same way, the qualification survey of hydrobiological products factories, through the principle of merits and demerits, gave a grade of B which indicates that it meets various conditions of the premises, equipment, personnel and work systems, necessary to obtain a good product. In the physical-organoleptic analyzes it can be seen that the preserves comply with the NTP 204.007:2021 standard. Which tells us that the conservation product of the company BELTRAN PERÚ complies with all the physical-organoleptic analyses, which would indicate that it produces a quality and highly competitive product.
