Abstract
En la presente investigación se realizó la extracción y caracterización fisicoquímica del almidón extraído de los tubérculos de Pituca (Colocasia esculenta L. Schott), Achira (Canna indica L.) y Michuchi (Xanthosoma sagittifolium) provenientes de la Provincia de San Ignacio, Departamento de Cajamarca. Se realizó la determinación de pH, humedad, contenido de cenizas, contenido de proteína, contenido de fibra, contenido de amilosa, tamaño de partícula, temperatura de gelatinización, poder de hinchamiento y sinéresis. De acuerdo al análisis realizado los almidones de Pituca, Achira y Michuchi presentaron valores de pH (5.63, 6.2, 8.31), humedad (5.11%, 7.54%, 5.82%), cenizas (1.44%, 0.23%, 0.33%), proteína (2.49%, 2.95%, 2.35%), fibra (1.5%, 7.63%, 5.5%), amilosa (25.45%, 52.23%, 37.01%), tamaño de partícula en μm (3.25, 83.51, 13.49), temperatura promedio de gelatinización (74.5°C, 73.3°C, 73°C), poder de hinchamiento (24.15, 21.22, 31.93) g H2O/ g almidón, sinéresis (2.36%, 11.82%, 4.33%)
