Abstract
El caserío de San Juan Bajo, es una comunidad pequeña, netamente agrícola del distrito de Julcán y provincia del mismo nombre, este caserío y su población presentan ciertas características propias de caseríos de iguales dimensiones y condiciones sociales, tales como altas tasas de desnutrición crónica y anemia entre sus integrantes más vulnerables. Motivo que nos pone a analizar la interacción entre alimentación como “hecho alimentario” y globalización como la industrialización del mercado en el caserío de San Juan Bajo (así como en los andes en general) tomándola como un fenómeno complejo que viene transformando gradualmente las prácticas agrícolas de esta comunidad rural y sus hábitos alimenticios implícitos, dada la especial relación, cosmovisión que existe entre las comunidades agrícolas y el consumo de los alimentos que ellos mismos producen. A lo largo del tiempo, la globalización ha traído y continúa trayendo consigo una serie de cambios sustanciales que han impactado directamente en la dieta tradicional andina y de esta comunidad en específico. Este trabajo quiere dilucidar cómo la globalización ha influido y/o está influenciando en la alimentación de los habitantes del caserío de San Juan Bajo y los hábitos alimenticios en torno a esta, destacando la dicotomía entre la preservación de las tradiciones alimentarias y la adopción de nuevos elementos alimenticios y practicas alimenticias que se verán reflejados en la salud de sus pobladores.
Abstract The hamlet of San Juan Bajo is a small, purely agricultural community in the district of Julcán and province of the same name. This hamlet and its population present certain characteristics typical of hamlets of the same size and social conditions, such as high rates of chronic malnutrition and anemia among its most vulnerable members. Reason that leads us to analyze the interaction between food as a “food fact” and globalization as the industrialization of the market in the hamlet of San Juan Bajo (as well as in the Andes in general), taking it as a complex phenomenon that is gradually transforming agricultural practices. of this rural community and its implicit eating habits, given the special relationship, worldview that exists between agricultural communities and the consumption of the food they themselves produce. Over time, globalization has brought and continues to bring with it a series of substantial changes that have directly impacted the traditional Andean diet and that of this specific community. This work aims to elucidate how globalization has influenced and/or is influencing the diet of the inhabitants of the San Juan Bajo hamlet and the eating habits around it, highlighting the dichotomy between the preservation of food traditions and the adoption of new food elements and eating practices that will be reflected in the health of its inhabitants
