Abstract
El informe titulado "Control y aseguramiento de la calidad en la postcosecha de arroz en la empresa Grupo Molinero PARCKER´S S.A.C. - Pacasmayo" tiene como objetivo presentar la experiencia laboral realizada en dicha empresa. La experiencia se desarrolló en el Área de Control de Calidad y postcosecha de arroz, asegurando el cumplimiento de la normativa de Inocuidad Alimentaria y del Sistema HACCP en los procesos de secado y pilado, según lo establecido por Grupo Molinero PARCKER´S S.A.C. El documento detalla la experiencia laboral adquirida como profesional y la memoria descriptiva del desempeño en Grupo Molinero PARCKER´S S.A.C., incluyendo la introducción, experiencia adquirida, descripción del proceso productivo y propuesta de mejora en el procesamiento postcosecha del arroz. Los resultados evidenciaron ausencia de capacitaciones en manejo de equipos y monitoreo, en el control de temperatura y humedad del grano y en uso de equipos de protección personal, luego de la aplicación de un cronograma de capacitaciones se logró mejoras en un 83% en el manejo de equipos, de un 99% en el control de la temperatura y humedad del grano y en un 100% en cuanto al uso de indumentaria para protección personal.
ABSTRACT The report entitled "Quality control and assurance in post-harvest rice at Grupo Molinero PARCKER´S SAC - Pacasmayo" aims to present the work experience carried out at said company. The experience was developed in the area of post-harvest quality control of rice, ensuring compliance with food safety regulations and the HACCP System in the drying and milling processes, as established by Grupo Molinero PARCKER´S S.A.C. The document details the work experience acquired as a professional and the descriptive report of the performance at Grupo Molinero PARCKER´S S.A.C., including the introduction, experience, proposal for improvement in post-harvest processing of rice, as well as the results and conclusions.The results showed an absence of training in equipment management and monitoring, in controlling grain temperature and humidity, and in the use of personal protective equipment, After the application of a training schedule, 83% improvements were achieved in the management of equipment, 99% in the control of grain temperature and humidity, and 100% in the use of personal protective clothing.
