dc.description.abstractLa industria alimentaria está experimentando una mayor exigencia en cuanto a la inocuidad, por lo cual se viene usando diferentes sistemas que guíen los procesos y que permitan obtener una mejor eficiencia. El sistema HACCP proporciona herramientas que ayudan a establecer indicadores de cumplimiento, los cuales mejoran la producción, a través de la identificación y determinación de puntos críticos, cuales a su vez serán controlados por medio de límites críticos. Es necesario que estos sean evaluados, de tal manera que se pueda establecer acciones preventivas y correctivas necesarias que generen mejoras. Se realizó un diagnóstico inicial usando la Norma sanitaria para la aplicación del sistema HACCP en la fabricación de alimentos y bebidas RM N° 449-2006 / MINSA y se identificó la situación actual del laboratorio de Cereales y Leguminosas, permitiendo así determinar el plan de acción que ayude a mejorar las condiciones de inocuidad en los alimentos. Obteniéndose un 72% de cumplimiento post implementación de BPM, POES y HACCP, a comparación de un 63% de no cumplimento inicial. Se elaboraron una serie de indicadores con los cuales se podrán medir y hacer seguimiento al cumplimiento de las BPM y POES además de generar resultados que ayuden a tomar decisiones para la mejora continua del proceso.
dc.description.abstractABSTRACT The food industry is experiencing a greater demand in terms of safety, which is why different systems have been used to guide the processes and to obtain a better efficiency. The HACCP system provides tools that help establish compliance indicators, which improve production, through the identification and determination of critical points, which in turn will be controlled by means of critical limits. It is necessary that these be evaluated, in such a way that preventive and corrective actions that generate improvements can be established. An initial diagnosis was made using the Sanitary Standard for the application of the HACCP system in the manufacture of food and beverages RM N ° 449-2006 / MINSA and the current situation of the Cereals and Legumes laboratory was identified, allowing to determine the action plan to help improve the safety conditions in food. Obtaining 72% compliance after implementation of BPM, POES and HACCP, compared to 63% of initial non-compliance. A series of indicators were developed with which it will be possible to measure and monitor compliance with the Good Manufacturing Practicesand and Standardized Sanitation Operational Procedures, in addition to generating results that help to make decisions for the continuous improvement of the process.
