dc.descriptionThe overall objective of this work is to determine the relationship between color and the physiological and physicochemical characteristics of hot pepper (Capsicum pubescens) , so we can predict certain features only know the parameters rocoto color . Rocoto Huamachuco was used to carry out this work, in which a selection and sorting of raw material according to its maturity was done ; green, ripening fruit , ripe and overripe , taking five samples for each condition. Parameters determined color (a * , b * and L ) with the digital colorimeter ; the specific physiological characteristics were: respiration rate CO2 sensors ( mgCO2 / kg h ) and O2 ( mg O2 / kg h ) , from these respiratory quotient (RQ ) was calculated , the transpiration rate was determined by difference weight. As long as certain physicochemical characteristics were: Brix refractometer, pH with a pH meter and titratable acidity. The relationship between color and physiological and physicochemical characteristics was evaluated using the multiple regression analysis through the Pearson correlation coefficient (r) and the coefficient of determination (R2) . It was determined that the pH increases as the product matures, so does the Brix and% acidity. In addition it was found that there is a significant positive relationship between Brix and acidity with rocoto color parameters but not for the other characteristics. Keywords: Capsicumes_ES
dc.description.abstractEl objetivo general de este trabajo es determinar la relación del color con las características fisiológicas y fisicoquímicas del rocoto (Capsicum pubescens), y así poder predecir ciertas características con solo conocer los parámetros del color del rocoto. Para la realización de este trabajo se utilizó rocoto de Huamachuco, en la que se realizó una selección y clasificación de la materia prima según su estado de madurez; verde, pintón, maduro y sobremaduro, tomando cinco muestras para cada estado. Se determinó los parámetros del color (a*, b* y L) con el colorímetro digital; las características fisiológicas determinadas fueron: tasa de respiración con sensores de CO2 (mgCO2 /kg h) y O2 (mgO2 /kg h), a partir de estos se calculó el cociente respiratorio (CR), la tasa de transpiración se determinó por diferencia de peso. En tanto las características fisicoquímicas determinadas fueron: º Brix con un refractómetro, pH con un pH-metro y la acidez titulable. La relación entre el color y las características fisiológicas y fisicoquímicas se evaluó utilizando el análisis de regresión múltiple a través del coeficiente de correlación de Pearson (r) y el coeficiente de determinación (R2). Se determinó que el pH aumenta a medida que el producto va madurando, lo mismo ocurre con los º Brix y el % de acidez. Además se encontró que existe una relación positiva significativa entre ºBrix y la acidez con los parámetros del color del rocoto mas no para las demás características.es_ES
