NIVEL DE CONTAMINACIÓN POR ENTEROBACTERIAS EN ALIMENTOS PREPARADOS Y EXPENDIDOS AMBULATORIAMENTE EN EL DISTRITO DE TRUJILLO, PERÚ, 2019

dc.description.abstractEn el distrito de Trujillo abunda el comercio ambulatorio, siendo el rubro de alimentos preparados el de mayor repercusión sobre la salud del consumidor. Por ello, es necesario determinar el nivel de contaminación por enterobacterias en alimentos preparados y expendidos ambulatoriamente mediante la sistematización de los resultados de recuentos microbiológicos y la georreferenciación de los puntos de expendio por nivel de contaminación. Se recopilaron los resultados de la cuantificación de enterobacterias de alimentos vendidos ambulatoriamente durante los meses de enero a agosto del año 2019, realizados en el Laboratorio de Análisis de Alimentos de la Sub Gerencia de Salud de la Municipalidad Distrital de Trujillo, los cuales se tabularon y organizaron en función al mes, lugar, tipo de muestra y recuentos de enterobacterias. Se georeferenciaron los puntos de muestreo con el software Google Earth Pro y se constituyeron niveles de contaminación en función a rangos de recuento, considerando como límite inferior 0 UFC/g o mL y límite superior >300 UFC/g o mL. Los datos fueron sometidos a un análisis estadístico básico descriptivo con el software Microsoft Excel 2019. En enero y febrero predominó la contaminación baja con 48.00% y 40.68%, mientras que, en marzo, abril, junio, julio y agosto fue alta con 36.36%, 54.55%, 71.11%, 55.22% y 60.61%. Los niveles de contaminación en el 2019 fueron de 48.67% alta, 2.88% media, 19.90% baja y 28.56% nula. Se concluye que en Trujillo el nivel de contaminación por enterobacterias en alimentos expendidos ambulatoriamente fue alto con un 48.67 %. Los meses de enero y febrero presentaron contaminación baja con un 48.00% y 40.68%; junio, julio y agosto presentaron contaminación alta con 71.11%, 55.22% y 60.61%. Los alimentos vendidos ambulatoriamente en las Avenidas Los Incas, Eguren, José Gálvez, Francisco de Zela, Sinchi Roca, Suarez y Cesar Vallejo presentaron nivel de contaminación alta.
dc.description.abstractIn the district of Trujillo, there is an abundance of street commerce, with prepared foods having the greatest impact on consumer health. Therefore, it is necessary to determine the level of contamination by enterobacteria in prepared and street-commerced foods by systematizing the results of microbiological counts and geo-referencing the points of sale by level of contamination. The results of the quantification of enterobacteria in food sold outdoors during the months of January to August 2019, carried out in the Food Analysis Laboratory of the Health Sub-Management of the District Municipality of Trujillo, were compiled, tabulated and organized according to month, place, type of sample and enterobacteria counts. In January and February, low contamination predominated with 48.00% and 40.68%, while, in March, April, June, July and August it was high with 36.36%, 54.55%, 71.11%, 55.22% and 60.61%. Contamination levels in 2019 were 48.67% high, 2.88% medium, 19.90% low and 28.56% null. It is concluded that in Trujillo the level of contamination by enterobacteria in food sold in outlets was high at 48.67%. The months of January and February presented low contamination with 48.00% and 40.68%; June, July and August presented high contamination with 71.11%, 55.22% and 60.61%. Food sold in street commerce in Los Incas, Eguren, José Gálvez, Francisco de Zela, Sinchi Roca, Suarez and Cesar Vallejo Avenues showed high contamination levels.
