dc.descriptionThe present work aims to determine azo dyes in juices and refreshing beverages in the central market of Trujillo, March-April 2016; It was determined whether the dyes were identified in the listing of dyes authorized by the Peruvian National Technical Standard (ITINTEC), SUPREME DECREE No. 007-98-SA Regulation on Food and Beverage Surveillance and Control of Food and Codex Alimentarius. Twelve samples were used; 3 of each flavor of the 3 brands of mixed juices and 3 of each flavor of the 3 brands of soft drinks that are spent in the Central Market of the city of Trujillo (Líber Mix, Líber Durazno, Pulp Mix, Pulp Durazno, Frugos Durazno, Mango Frugos, Cifrut Punch, Cifrut Fruit Punch, Tampico Citrus Punch, Tampico Tropical Punch, Aruba Punch Granadilla and Aruba Citrus Punch). The qualitative identification was performed for artificial dyes by the Arata-Possetto method in each of the samples. In the samples that were positive, the presence of azo dyes was investigated by the Aniline Diazotization Method. Samples that were positive to this test were dried in a constant weight oven and then the Azo dyes were identified by spectrophotometry. E-102, E-110, E-111, E-120 and E-129, which are in the list of artificial colors allowed for use in food in Peru according to: ITINTEC. From the results obtained it is concluded that they are suitable for human consumptiones_PE
dc.description.abstractEl presente trabajo tiene por finalidad determinar colorantes azoicos en jugos y bebidas refrescantes expendidas en el mercado central de Trujillo, Marzo-Abril de 2016; se determinó si los colorantes identificados se encuentran en el listado de colorantes autorizados por la Norma Técnica Peruana Nacional (ITINTEC), el DECRETO SUPREMO Nº 007-98-SA Reglamento Sobre Vigilancia y Control Sanitario de Alimentos y Bebidas y el Codex Alimentarius. Se trabajaron con 12 muestras; 3 de cada sabor de las 3 marcas de jugos mixtos y 3 de cada sabor de las 3 marcas de bebidas refrescantes que se expenden en el Mercado Central de la ciudad de Trujillo (Líber Mix, Líber Durazno, Pulp Mix, Pulp Durazno, Frugos Durazno, Frugos Mango, Cifrut Punch, Cifrut Fruit Punch, Tampico Citrus Punch, Tampico Tropical Punch, Aruba granadilla Punch y Aruba Citrus Punch). Se realizó la identificación cualitativa para colorantes artificiales por el Método de Arata- Possetto en cada una de las muestras. En las muestras que resultaron positivas se investigó la presencia de colorantes azoicos por el Método de Diazotaciòn de la Anilina. Las muestras que resultaron positivas a esta prueba se secaron en estufa peso constante para luego realizar la Identificación de los Colorantes Azoicos por Espectrofotometría. Los colorantes artificiales azoicos que se identificaron fueron los siguientes: E-102, E-110, E-111, E-120 y E-129, los cuales se encuentran en la lista de colorantes artificiales permitidos para uso en alimentos en el Perú según ITINTEC.
