dc.descriptionWas determinated the quality nutritional of the protein in the cloak of Dosidicus gigas “Pota”, where were used the biological test of Protein Efficiency Relation (PER), Net Protein Utilization (NPU), Coefficient of Digestibility (CD) and Biological Value (VB). To the determination of macronutrients was found: 15, 65 g % of protein, 0, 5744 g % of fat and 81, 17% of water. To the determination of Biological Value according to NPU the results were: NPU= 74, 96; CD= 86, 93; VB= 86, 23. To the determination of Biological Value according to PER the result was: 84, 83. In this test was used a statistical design t de student with level of significance of 0.05, this show there isn’t significance difference between the PER of the casein: 1, 01 and PER of the trial protein: 0,858. (p = 0,183; p>0, 05; N.S.) These results show a high Biological Value of the protein in the “Pota”es_ES
dc.description.abstractSe determinó la calidad nutricional de la proteína presente en el manto de Dosidicus gigas “Pota”, para lo cual se utilizaron las pruebas biológicas: Relación de Eficiencia Proteica (PER), Coeficiente de Digestibilidad (CD), Utilización Proteica Neta (NPU) y Valor Biológico (VB). En la determinación de macronutrientes se encontró 15,65 g % de proteína, 0,5744 g % de lípidos y 81,17% humedad. Para la determinación del valor biológico según NPU, los resultados obtenidos fueron: NPU= 74,96; D= 86,93; VB= 86,23. Para la determinación del valor biológico según PER el resultado obtenido fue: 84,83. En esta prueba se empleó un diseño estadístico t de student con nivel de significancía de 0.05, lo que indica que no hubo diferencia significativa entre el PER de la caseína: 1,01 y el PER de la proteína ensayo: 0,858. (p = 0,183; p>0,05; N.S.). Estos resultados muestran un alto valor biológico de la proteína presente en el manto de Dosidicus gigas “Pota”.es_ES
