dc.description.abstractIn order to improve the polishing step to reduce the percentage of broken grain in the processof milledrice in the Santa Catalina Mill Company S.R.L.,was conducted this investigation. It performed the rice milled in the laboratory to determine that the material meets the requirements of milled, especially the percentage of broken kernels. Then it proceeded to milled rice at the mill, and the percentage of broken kernels in its initial state. Then took place the improvement of polishing and determined the percentage of broken grains to make an assessment of the degree of improvement of the polisher. Finally an economic evaluation was conducted on improving the buffer. In the initial state of the grinding mill in the Santa Catalina S.R.L. company there was a percentage of broken grain average of 12.24. By improving the functioning of the buffer was obtained 6.98% brokens obtaining a reduction of 5.26%. It get an additional annual profit of S /. 92160.00 Nuevos Soles to improve the operation of the grinder in the Santa Catalina Mill Company S.R.L. The company also wins kudos because farmers also improve their income by getting more sacks of rice classified.es_ES
