dc.descriptionIn this rearch´s is work is carried out the characterization of the Maníhot esculenta starch White and yellow Var. Come from the distric of Poroto (Hamlet – Mochal), province of Trujillo - La Libertad. The physical – chenical properties were studiet of saying starch; according to the analytic methods accepted internationally. The extraction out put of the Maníhot esculenta starch White Var. Is of 18.868% and of the yellow Var. 14.362%. It founded that the yellow Var. Starch has doomp´s porcentaje (23.5%) in corporison with the White Var. (14.0%). Saying vlaves aren´t inside of the established level by the INTINTEC (1974) rules. The starch´s graih present two mayoritilly shapes; hat´s shape or Middle moon and spherical with central characteristic hilio in shape of y According to the size. Thius oscillate between 6.85 – 18.5 um, with an amilosa´s contents of 27.267% and of 4.85 -15.4 um, with an amilosa´s contents of 25.422% for the Maníhot esculenta starch White Var. and yellow respectivelly. It obtained higher power of swelling to the 90 °C (8.9% , 9.95%) and good solubility (91.35% and 95.24%) for the Maníhot esculenta starch White Var. and yellow respectivelly. The starch gels of the two varieties of Maníhot esculenta duesn´t present sinéresis evaluated to the 8,15 and 21 days. Key Word: starch, Maníhot esculenta and Characteristics.es_ES
dc.description.abstractEn el presente trabajo de investigación se realizó la caracterización del almidón de Maníhot esculenta Var. Blanca y Amarilla provenientes del distrito de Poroto (Caserío - Mochal), provincia de Trujillo - La Libertad. Se estudiaron las propiedades fisicoquímicas de dicho almidón según los métodos analíticos internacionalmente aceptados. El rendimiento de extracción del almidón de Maníhot esculenta Var. Blanca es de 18.868% y de la Var. Amarilla 14.362%. Se encontró que el almidón de la Var. Amarilla tiene mayor porcentaje de humedad (23.5%) en comparación con la Var. Blanca (14.6%). Dichos valores no están dentro del rango establecido por las normas ITINTEC (1974). Los gránulos de almidón presentan dos formas mayoritariamente; forma de Sombrero o Media luna y Esférica con hilio característico central en forma de Y. Con respecto al tamaño este oscila entre 6.85-18.05 um, con un contenido de Amilosa de 27.267% y de 4.85 -15.4 um, con un contenido de Amilosa de 25.422% para el almidón de Maníhot esculenta Var. Blanca y Amarilla respectivamente. Se obtuvo elevado poder de hinchamiento a los 90°C (8.9%, 9.95%) y buena solubilidad (91.35% y 95.24%). Para el almidón de Maníhot esculenta Var. Blanca y Amarilla respectivamente. Los geles de almidón de las don variedades de Maníhot esculenta no presentan sinéresis evaluados a los 8, 15 y 21 díases_ES
