dc.descriptionIn the present work was identified the artificial azodyes in fresh drinks sold Mayorista and Hermelinda markets in Trujillo city, from May to June of 2013 and determined if the dyes are identified in the list of colors permitted by the Technical Standard National Peruvian (ITINTEC), the Supreme Decree No. 007-98-SA Regulations on Supervision and Control of Food and Beverage Health and Codex Alimentarius. 45 samples were analized, 3 of each flavor of the 6 brands of fresh drinks: Cifrut (Citrus Fruit Punch and Punch), Tampico (Citrus Punch, Island Punch and Tropical Punch), Aruba (Granadilla Punch and Peach), kris (Citrus Punch, Fruit Punch Pineapple and Granadilla), Aquarius (Apple, Orange, Pear and Pineapple) and Gloria Chicha Morada were analizated. The qualitative identification for artificial colors was performed by the method Arata-Possetto, the presence of azodyes by the Method of Aniline Diazotization, the identification of the azodyes in the samples by Spectrophotometric Method were investigated. Artificial azo dyes which were sunset yellow, tartrazine, Allura Red, Ponceau 4R, erythrosin and Blue Indigotine were identified.es_ES
dc.description.abstractEn el presente trabajo se identificó los colorantes artificiales azoicos en bebidas refrescantes expendidas en los mercados Mayorista y Hermelinda de la ciudad de Trujillo, Mayo –Junio de 2013 y se determinó si los colorantes identificados se encuentran en el listado de colorantes autorizados por la Norma Técnica Peruana Nacional (ITINTEC), el DECRETO SUPREMO N° 007-98-SA Reglamento Sobre Vigilancia y Control Sanitario de Alimentos y Bebidas y el Codex Alimentarius. Se analizaron 45 muestras; 3 de cada sabor de las 6 marcas de bebidas refrescantes: Cifrut(Citrus Punch y Fruit Punch), Tampico (Citrus Punch, Island Punch y Tropical Punch), Aruba (Granadilla Punch y Durazno), kris (Citrus Punch, Fruit Punch Piña y Fruit Punch Granadilla), Aquarius(Manzana, Naranja, Pera y Piña) y Gloria Chicha Morada. La identificación cualitativa para colorantes artificiales se realizó por el Método de Arata-Possetto. En las muestras que resultaron positivas se investigó la presencia de colorantes azoicos por el Método de Diazotación de la Anilina. La identificación de los colorantes azoicos presentes en las muestras se realizó por Espectrofotometría. Se identificó los siguientes colorantes artificiales azoicos: Amarillo Crepúsculo, Tartrazina, Rojo Allura, Punzo 4R, Eritrosina y Azul de Indigotina. Los cuales se encuentran en la lista de colorantes artificiales permitidos para uso en alimentos en Perú según ITINTEC. Por lo tanto son aptos para el consumo humano.es_ES
