Abstract
El objetivo del presente estudio fue determinar las condiciones óptimas de pH y temperatura para la producción de carotenoides a partir de la biosíntesis de semilla de palta variedad Hass, proporcionada por una empresa Agroexportadora de la localidad de Trujillo, Perú, se empleó la levadura Rhodotorula sp. De forma preliminar se determinó las condiciones óptimas de concentración de materia prima y concentración de ácido sulfúrico en el proceso de hidrólisis ácida de semilla de palta, posteriormente se realizó el proceso de extracción de carotenoides con solvente Dimetil Sulfóxido (DMSO), finalmente el producto extraído se cuantificó. La combinación optima de concentración de materia prima (15% p/p) y ácido sulfúrico (4.23% v/v) permitió obtener valores de 55.20 g/L de azúcares reductores, dicha concentración de azúcares se utilizó como variable de control en el proceso de biosíntesis de carotenoides, cuyos parámetros optimizados de temperatura (31.05 °C) y pH (7.07) resultaron en una concentración de carotenoides equivalente a 79.22 mg/L.
ABSTRACT The objective of this study was to determine the optimal pH and temperature conditions for the production of carotenoids from the biosynthesis of Hass avocado seeds, provided by an Agroexport company from the town of Trujillo, Peru. The yeast Rhodotorula sp. was used. Preliminary, the optimal conditions of raw material concentration and sulfuric acid concentration in the acid hydrolysis process of avocado seeds were determined. Subsequently, the carotenoid extraction process was carried out with Dimethyl Sulfoxide (DMSO) solvent, and finally, the extracted product was quantified. The optimal combination of raw material concentration (15% w/w) and sulfuric acid (4.23% v/v) allowed obtaining values of 55.20 g/L of reducing sugars, said concentration of sugars was used as a control variable in the carotenoid biosynthesis process, whose optimized parameters of temperature (31.05 °C) and pH (7.07) resulted in a carotenoid concentration equivalent to 79.22 mg/L.
