dc.descriptionThis investigation was performed in the TAL S.A. Agroindustrial Company and the main objective was to determine if the process of industrialization of fresh blueberries regarding the Brix y pH during the period from September to October of 2013 is under statistical quality control. The population consisted of the measurements made fresh blueberry in the laboratory of experimental TAL S.A. Agroindustrial Company during the period September - October 2013. The sample was obtained from a routine work carried out in experimental laboratory TAL S.A. Agroindustrial Company to analyze the quality of fresh blueberry respect to Brix and pH. The sampled units were drawn systematically, production for 46 days at 4 times daily cruises for simulating various international markets. The statistical analysis for the sensorial characteristics of quality showed a univariant normal distribution but also constitute a random vector with bivariant normal distribution. In addition, this sensorial characteristics shown to be correlated together through significance test of multivariate correlation (Bartlett's test of sphericit), this justified the application the Hotelling T2 test. The results showed that the industrialization process is under statistical control of quality throughout the production process which shows that the product is suited for human consumption and commercializationes_PE
dc.description.abstractLa presente investigación se realizó en la Empresa Agroindustrial TAL S.A. cuyo objetivo fue determinar si está bajo Control Estadístico de Calidad del proceso de industrialización del arándano fresco respecto al Brix y pH durante el periodo de Setiembre - Octubre del 2013. La población estuvo constituida por las mediciones realizadas del arándano fresco en el laboratorio experimental de la Empresa Agroindustrial TAL S.A. durante el periodo Setiembre - Octubre 2013. La muestra se obtuvo de un trabajo de rutina que se realiza en laboratorio experimental de la Empresa Agroindustrial TAL S.A. para analizar la calidad del arándano fresco respecto al Brix y pH. Las unidades muestreadas fueron extraídas en forma sistemática, durante 46 días de producción a razón de 4 veces diarias simulando travesías para los diferentes mercados internacionales. El análisis estadístico para las características sensoriales de calidad mostraron una distribución normal Univariante pero también constituyen un vector aleatorio con distribución normal Bivariante además mostraron estar correlacionadas conjuntamente mediante la prueba de significación de correlación Multivariante (Test de esfericidad de Bartlett) esto justificó la aplicación de la prueba de T2 de Hotelling. Los resultados mostraron que el proceso de industrialización se encuentra bajo control estadístico de la calidad en todo su proceso productivo lo cual muestra que el producto es apto para su comercialización y el consumo humanoes_PE
