dc.descriptionIn the present study, the reducing activity and total anthocyanin content of the fresh fruit of Prunus serotina "capulí" was determined. The concentration of total anthocyanins was determined by the differential pH method, while the DPPH• free radical capture method was used to determine the reducing activity or antioxidant capacity. Finding a concentration of 16,22 ± 0,24 mg of cyanidin-3-O-glucoside for the first case. And an IC50 of 61,94 g / mL and with a percentage of 85,4% of DPPH• capture for the case of reducing activity. Therefore, our study shows us the high reducing power of the Prunus serotina fruit and its possible effects for the benefit of healthes_PE
dc.description.abstractEn el presente estudio se determinó la actividad reductora y el contenido de antocianinas totales del fruto fresco de Prunus serotina “capulí”. La concentración de antocianinas totales se determinó mediante el método de pH diferencial mientras que para determinar la actividad reductora o capacidad antioxidante se usó el método de captura del radical libre DPPH•. Hallando una concentración de 16,22 ± 0,24 mg de cianidina-3-O-glucósido para el primer caso. Y un IC50 de 61,94 g/mL y con un porcentaje de 85,4% de captura de DPPH• para el caso de la actividad reductora. Por tanto, nuestro estudio nos da muestras del alto poder reductor del fruto de Prunus serotina y sus posibles efectos en beneficio de la saludes_PE
