dc.descriptionEn la presente investigación se estudió el proceso de envasado del tomate en conserva respecto a su Acidez, Grados Brix y pH en la empresa Agroindustrial Danper Trujillo S.A.C, con la finalidad de conocer si la calidad del proceso se encuentra bajo control estadístico de la calidad, mediante el uso de cartas de control multivariado, que permita la supervisión de las operaciones en el proceso productivo y así realizar modificaciones necesarias para cumplir con los objetivos y metas de la empresa. Se utilizó el muestreo sistemático para obtener los datos de las 20 muestras de conservas de tomate determinándose la normalidad marginal y multivariante, así como la correlación de las variables (Acidez, Grados Brix y pH), lo que permitió realizar el control estadístico multivariante de la calidad, concluyéndose que el proceso de envasado del tomate en conserva se encuentra bajo control.es_ES
dc.description.abstractIn the present investigation the packaging process of canned tomato respect to its acidity, Brix and pH in the Agroindustrial SAC Danper Trujillo, in order to know if the quality was studied process is under statistical quality control, letters using multivariate control, which allows the monitoring of the operations in the production process and thus make modifications necessary to comply with the objectives and goals of the company. . Systematic sampling was used to obtain the data from the 20 samples of canned tomato determining the marginal and multivariate normality and correlation of variables (acidity, Brix and pH), which allowed for multivariate statistical control of quality, concluding that the packaging process of canned tomatoes is under control.es_ES
