dc.description.abstractLa etapa de producción que determina la calidad de la Harina de Pescado es el Secado. En esta operación se requieren parámetros hallados empíricamente para cada sustancia pues no existe un modelo matemático que incluya todas las variables y/o mecanismos que ocurren durante el secado. En nuestro caso esta información no existe o no está disponible. De esta inquietud surge la interrogante: ¿Es posible determinar los parámetros de Secado y explicar los mecanismos que ocurren dentro de un secador por conducción para Harina de Pescado? La hipótesis de trabajo es: Las variables independientes muestreadas permiten determinar la velocidad y el coeficiente de secado y explicar el mecanismo de la operación dentro del secador. La contrastación se realizará procesando los datos obtenidos.es_ES
