Abstract
El presente trabajo de investigación tuvo como objetivo determinar el porcentaje de calcio, hierro y fosforo en los huevos de Coturnis coturnis ´´codorniz´´, los cuales fueron adquiridos en el mercado La Hermelinda Trujillo, setiembre 2021. La evaluación en cuanto a su concentración de calcio se realizó el método complexométrico,cuyo fin es determinar la presencia de calcio, obteniendo valores de 59,81 ± 0,0447 mg%Ca en yema y 69,36 ± 0,1095 mg% Ca en clara; Para el análisis de hierro se usó el método colorimétrico de Munsey con fenantrolina cuyo fin es determinar la presencia de hierro, la concentración en yema es de 2,19 ± 0,0004 mg% Fe y en clara 3,74 ± 0,0008 mg% Fe. En la determinación de fósforo se usó el método de Fiske y Subbaro, se encontró en Yema 6,15 ± 0,0027ug% P y en clara 13,70 ± 0,0057 ug% P.
