dc.descriptionThis research aimed to determine the antioxidant antioxidant protective effect of the alcoholic, ethereal extract, and essential oil of Origanum Vulgare L “oregano” on the autoxidative process of Helianthus annuus sunflower oil, exposed to environmental factors, for this purpose 8 liters of Sunflower oil, 2 liters were subjected to environmental exposure only, 2 liters with ethanolic extract, 2 with ethereal extract and finally 2 liters with essential oil. The technique used consisted of measuring the Oxidability Index, carrying out the experience every 12 hours for a period of 20 days. The results were: Helianthus annuus oil subjected to environmental factors and with ethanolic extract were stable only until the seventh day, with ethereal extract and essential oil remained stable for the 20 days that the trial lasted. It is concluded that the essential oil and the ethereal extract of Origanum Vulgare L, have antioxidant protective effect, on Helianthus annuus proving statistically that the essential oil is better protective than the ethereal extract, while the ethanolic extract does notes_PE
dc.description.abstractEsta investigación, tuvo como objetivo, determinar el efecto protector antioxidante del extracto alcohólico, etéreo y el aceite esencial de Origanum Vulgare L “orégano” sobre el proceso autoxidativo de aceite de girasol Helianthus annuus, expuesto a factores ambientales, para ello se utilizaron 8 litros de aceite de girasol, 2 litros fueron sometidos solamente a exposición ambiental, 2 litros con extracto etanólico, 2 con extracto etéreo y por ultimo 2 litros con aceite esencial. La técnica empleada consistió en la medición del Índice de Oxidabilidad, realizando la experiencia cada 12 horas por un periodo de 20 días. Se encontró que : el aceite de Helianthus annuus sometido a factores ambientales y extracto etanólico fueron estable sólo hasta el séptimo día, mientras que con extracto etéreo y aceite esencial se mantuvieron estables los 20 días que duró el ensayo. Se concluye, que el aceite esencial y el extracto etéreo de Origanum Vulgare L, tienen efecto protector antioxidante, sobre aceite de Helianthus annuus, demostrándose estadísticamente que el aceite esencial es mejor protector que el extracto etéreo, mientras que el extracto etanólico noes_PE
